Until last year, the wine was made with 100% Riesling Lion, but this season, due to limited supply of Riesling Lion, we mainly used the available Müller-Thurgau instead.
This season, we brewed Müller-Thurgau for the first time, and we were enchanted by the ester aroma from the start of fermentation as we proceeded with the brewing.
Blended with our estate Riesling Lion and Sauvignon Blanc to balance the overall profile. Minimal chaptalization, no acidification. Fining agents used, filtered.
The color is a glossy lemon yellow. Strong aroma of green apple, white flowers, stone fruits, and more,
Ester aroma. The taste is gentle and light on the attack, with fruity fruitiness, bitterness, and acidity in the finish, and a faint salty flavor in the aftertaste. Light and delicate, it pairs well with raw seafood.
