Fermentation started separately for each variety. Several types of yeast with different aroma profiles were used and blended.
Brewed to express various wine-like characteristics.
Fermentation temperature for all varieties is generally low, around 14–16°C, for about 2 weeks.
Very little added sugar, no acid adjustment. Fining agents used, filtered.
The color is a glossy lemon yellow. The aroma includes green apple, white flowers, and citrus.
Compared to the previous vintage, it has a thiol nuance and a refreshing impression.
The taste is gentle and light on the attack, with a fruity fruitiness, bitterness, and acidity in the finish, and a faint salty aftertaste. It is lively and delicate, pairing well with raw seafood.
