Fukuyama Wine Workshop / Sauvignon Blanc Extra Brut 2020 (White Sparkling) 750ml

This is a sparkling wine made from Sauvignon Blanc by Yokomachi Père et fils in Miyoshi City, Hiroshima Prefecture. After destemming and crushing, the juice is extracted, followed by primary fermentation at low temperatures, bottling, secondary fermentation in the bottle, and aging in the bottle for 15 months. Riddling (to remove the sediment), disgorgement (to expel the sediment), and dosage (to add liqueur) were performed. No sugar was added in the dosage, resulting in an Extra Brut finish.
The herbaceous aroma typical of Sauvignon Blanc, the refreshing quality reminiscent of grapefruit, and the fruitiness of the grapes that reflects the favorable weather of 2020 can also be felt.
