Regular Price ¥6,600This is our commemorative bottle, born from our love for Champagne and our aspiration to create it. We had originally planned to let it age a bit longer before releasing it, but due to the current situation with the winery's relocation, we had to release it urgently. In gratitude for everything so far, we named it "merci" (thank you). It was vinified in 2016, bottled in 2017, and aged for a long 36 months with the lees in the bottle. The remuage (riddling) was done by hand, turning the bottles a little each morning and evening (the yellow mark on the bottom of the bottle is a reference for that). In July 2020, each bottle underwent degorgement (disgorging) by hand, and it continued to age in the cellar. The grapes, harvested in a high-acid state for long-term aging, are still vibrant even after 7 years, and further aging can be expected. Please enjoy the sense of maturity and delicate bubbles. Limited production of 200 bottles.
