Petit Manseng and Albariño grown on sunny slopes of Manriki Yamaji in Yamanashi City are co-fermented.
Fermentation starts with wild yeast in old barrels and stainless steel tanks, then commercial yeast (DV-10) is added in the late fermentation stage.
Fermentation is stopped while balancing acidity. The fermentation period is about one month.
Stored sur lie for about 6 months, then racked and bottled.
A slightly dry to medium wine with notes of yellow fruit and honey.
