In 2025, Naoto Odaka, the owner of the restaurant grege in Hachioji, Tokyo, with whom I have been friendly for some time, came to Alfio re for intensive training as he wants to gain experience in winemaking himself.
In a conversation with him, we talked about "Vinho Verde," a fresh and lightly sparkling wine famous as a new Portuguese wine, and decided to try making it.
Inspired by him, I judged that the Seibel grape was very suitable, and I made the wine using Seibel based purely on the image.
This turned out to be a very good result, and the 2025 "Ame ni mo Makezu" became this Vinho Verde-style wine.
