Sola, known as the charming Delaware sparkling wine in the Neko series.
Sola, which is usually released from early spring to early summer every year, unfortunately could not be released this year. The reason is that 2023 was very hot, causing the Delaware grapes to become overripe, which lowered the acidity too much to produce a sparkling wine.
However, as usual, while fermenting in barrels, I noticed an incredibly high potential somewhere. As expected, after aging in barrels for a full year, it evolved remarkably, and now we need to reconsider the concept of Delaware wine. This flavor has developed into a beautiful wine with such potential that you wouldn’t guess it’s Delaware at first glance.
