Regular Price ¥3,800Every year, the Neko Series Anko is crafted into orange wine (amber wine) made from fermented Delaware grapes. Each year, we have been exploring the significance of using the Labrusca variety (table grape variety) for winemaking and the direction we aim to take. After 10 years of facing winemaking, I feel that we have found one answer to the expression of fully ripe Delaware grapes.
"After a long fermentation period of about 4 months, the aroma known as the foxiness characteristic of the Rabluska variety has disappeared, and against the easily dropping acidity that comes with full ripeness for fresh consumption, a slight amount of volatile acidity has been added without any unpleasantness."
Sufficient alcohol volume, a pleasant level of volatile acidity, oxidation aging in old barrels, and oxidation aging in amphorae. When it comes to Raboso on its own, it can easily become one-dimensional, but I believe that the brewing methods have allowed us to create complexity and depth.
Wines made from grapes with Japanese heritage, which easily pair with the climate, ingredients, and cuisine of Japan without any contradictions, have been crafted into wines that allow us to re-recognize the direction of wines made from Japanese grapes in the future.
