Regular price ¥4,290Anko is crafted each year as an orange wine (amber wine) by fermenting Delaware grapes.
Every year, we have explored the meaning and direction of making wine from the Labrusca variety (a table grape).
Marking ten years of dedication to winemaking, I feel we have found one way to express fully ripe Delaware grapes.
Through about four months of extended maceration, the characteristic "foxy" aroma of the Labrusca variety disappears, and a subtle, non-offensive volatile acidity is added to balance the acidity that tends to drop with ripening in table grapes.
It features ample alcohol volume, a pleasant level of volatile acidity, oxidative aging in old barrels, and oxidative aging in amphorae.
While pure Labrusca can tend to be one-dimensional, I believe we were able to add complexity and depth through the winemaking method.
Made from grapes with Japanese heritage, this wine harmonizes perfectly with Japan’s climate, ingredients, and cuisine without any contradictions. It represents a renewed direction for Japanese wines made from Japanese grapes.
It has the potential to continue growing for the next five years, and since it remains enjoyable for a long time after opening, being able to savor it slowly over time is one of its charms.
