Apassimento means sun-dried.
As the name suggests, this is an experimental wine made by fermenting grapes that were sun-dried and concentrated.
and then I thought, "Let’s stop trying to make delicious wine!"
The wine we aim for is one that continues to express the grapes as they are. In nature, where no two years have the same climate,
is made entirely from grapes grown with even more love.
Not with a strong superficial impact, but a wine that, the more you taste it, never flashy,
We aimed to create a wine that purely conveys its essential goodness without forcing it.
Harvested in late September, the Muscat Bailey A was dried on the railing of the winery’s second floor, which used to be a gymnasium.
the Neo Muscat was sun-dried whole cluster for two months on rice straw by Yuki Sato, a rice creator from Kakuda City.
Originally, we planned to make them separately, but since the quantity became too small,
it was co-fermented with Muscat Hamburg, which shares the same parent grape.
All spoiled grapes that appeared during sun-drying were carefully sorted out, then after one month of fermentation in the tank,
Juiced using a basket press. After settling the coarse lees once, it was aged in barrels for one year before bottling.
Released after an additional year of bottle aging.
Even if you drink it now, it already has a sufficiently deep flavor, but honestly, it’s better to let it age longer.
I think the flavor will deepen even more. I imagine that after 2027, it will develop into a very delicious wine.
