Apassimento means drying in the shade.
As the name suggests, this is an experimental wine made by fermenting sun-dried, concentrated grapes.
And then I thought, "Let's stop making delicious wine!"
The wine we aim for is one that continues to express the grapes as they are. In nature, where no two years have the same climate,
All the grapes were grown with even more love.
Not with a strong superficial impact, but with every sip, it never shows flashiness,
We wanted to aim for a wine that purely conveys its essential goodness without forcing it.
Each was harvested in late September, and Muscat Bailey A was dried on the railing of the second floor of the winery, which used to be a gymnasium.
Neo Muscat was sun-dried whole cluster for two months on rice straw by Yuki Sato, a rice creator from Kakuda City.
Originally, we planned to process them separately, but since the quantity became too small,
It was co-fermented with Muscat Hamburg, which shares the same parent.
All rotten grapes that appeared during sun-drying were sorted out, and after a month of maceration fermentation in the tank,
Juiced with a basket press. After settling the rough lees once, it was aged in barrels for one year before bottling.
It was released after an additional year of bottle aging.
Even if you drink it now, it already has a sufficiently deep flavor, but honestly, it still benefits from aging,
I think the depth of flavor will become richer. I imagine that after 2027, it will mature into a very delicious wine.
