The members of the Kamiyama South Wine Grape Association are very conscious and have wonderful training, but among them, Mr. Suzuki's one-bud short pruning of Bailey A is particularly impressive.
The 2021 Butch was so wonderful that it hardly needs any explanation for those who have tasted it. However, in 2022, the second year, due to the late frost and hail in the Ueyama region, as well as insufficient sunlight during the ripening period, we couldn't achieve the same level of ripeness as in 2021. Nevertheless, while it may not have the concentrated fruitiness, it has turned out to be very well-balanced, elegant, with a vibrant acidity and gentle tannins, and can be enjoyed at an early stage.
After pressing for more than 2 months of fermentation, it is aged in stainless steel tanks for 6 months and then aged in barrels for 3 months.
