Among the Cat series, Hana has a more charming fruitiness and acidity. When fermented with Stuben, it results in a lovely sweet and sour flavor reminiscent of cherries.

Every year, the varietals and types change, but by combining grape varieties for wine, we not only make it easy to drink, but also give it structure and complexity as a wine.

The 2022 vintage is a blend of Mr. Ohno's Merlot, known for Rosso, and was pressed a week later. Fermentation was allowed to finish as is, and after a single racking, it was sealed in a stainless steel tank. After 5 months of aging, it was bottled, and after an additional 6 months of bottle aging, it was released. Mr. Kazama's Steuben grapes are not all harvested at once; first, 30% is picked early for use in brand noir, then 50% is harvested when fully ripe, with the burden on the vines lightened. Finally, only the grapes with remaining potential are harvested after further ripening, resulting in this Hana. I am truly grateful to the farmers who, year by year, help us think together and evolve the grapes, nurturing them regardless of the year. We take joy in transforming those grapes into wine and delivering it to everyone, while also assisting in their management. Although there are still many areas where we fall short, we aim to produce better wine year after year.
