Grapes: 100% Tsugaru-grown Yamasauvignon
Brewing: 60% of Yamaso grapes were hand-destemmed and placed in the tank, then the rest were destemmed and crushed before being added sequentially. Fermented for about two weeks before pressing. Extraction is slightly stronger than the 2023 vintage.
Flavor: Fruity and acidic, with fine, rounded tannins and a clean finish. Notes of plum and red shiso.
