Iwate Prefecture Yama Sauvignon × Campbell were both destemmed, crushed, and placed into an open tank. Wanting to be enveloped by the aroma and feel the liquid temperature and fermentation stimulation with my whole body, I playfully hand-plunged for 2 weeks, then pressed. To allow it to penetrate deeper and linger in the mouth, it was aged in French oak. Bottled after 8 months when the edges began to soften. After about a year of careful rest in the cellar, it makes its appearance. A syrupy brown sugar plum wine with cinnamon and cumin spice aromas. While the acidity firmly grips, the fruitiness reminiscent of fully ripe plums and the cocoa-like depth release the aftertaste, repeating the delight of tension and relaxation.
