Grapes are sorted before pressing. Two types of grapes are pressed whole-cluster separately using a basket press. Aged for 3 months in resin tanks. After fermentation, the lees are removed, and the two types of wine are blended at this stage. A second lees removal is done before bottling. Then sugar is added, followed by bottling and secondary fermentation in the bottle.
