Aiming to be the world’s easiest-to-drink orange wine. This is SHINDO WINES’ second 100% Kyoho orange wine.
Kyoho grapes have high water content and the pigments in their skins are not strong, so even with long fermentation, it is difficult to achieve the deep purple-red color typical of common red wine varieties. However, with short maceration fermentation, the tannin influence from the skins is not too strong, resulting in a juicy, charming, and easy-to-drink orange wine.
"ASAHA ORANGE" is an orange wine made only from Kyoho grapes with a reddish color like Delaware, despite their ripeness. The first release, "Egalite 2021," was made with the concept of a "robust orange," but "ASAHA ORANGE" was blended with the image of a "clean and easy-to-drink orange." The blend ratio is just over 40% orange wine and just under 60% white wine. Blending with white wine reduces the bitterness and astringency unique to orange wine. Additionally, red wine that underwent long maceration fermentation is blended as a hidden flavor element to add depth to the aroma and taste.
The orange wine used in the blend was fermented at room temperature in a resin tank for 5 days, then fermented in an amphora after pressing. The white wine underwent overnight skin contact, then was temperature-controlled at low temperature in a stainless steel tank and slowly fermented over 3 weeks. Both were left to settle for 2 weeks after fermentation, then racked, and aged in stainless steel tanks for 6 months before bottling.
Bottled on April 18, 2023, it has undergone about 15 months of bottle aging. It has been crafted into an orange wine that fully expresses the warm climate of Fukuoka and Kyushu.
Using wild yeast. Unfiltered, unclarified. No sugar or acid adjustments are made. A very small amount of sulfur dioxide is used at bottling.
