"Aiming for the world's easiest-to-drink orange wine. This is the second release of SHINDO WINES' 100% Kyoho grape orange wine."
The Kyoho grape has a high moisture content, and the pigments contained in its skin are not very strong, making it difficult to express a deep purplish red color like that of typical red wine varieties even after long fermentation. However, when a short maceration fermentation is performed, the influence of the tannins in the skin is not too strong, resulting in a juicy, cute, and easy-to-drink orange wine.
"ASAHA ORANGE" is an orange wine made exclusively from red-tinged Kyoho grapes that have ripeness similar to Delaware. The first release, "Egalite 2021," was crafted with a focus on a "robust orange," while "ASAHA ORANGE" was blended with the image of a "clean and easy-to-drink orange." The blending ratio is slightly over 40% orange wine and just under 60% white wine. By blending with white wine, the unique bitterness and astringency of the orange wine are reduced. Additionally, to express depth in the aroma and flavor, red wine that has undergone long-term maceration fermentation is blended as a hidden element.
The orange wine used in the blend was fermented at room temperature in a resin tank for 5 days, and after pressing, fermentation was carried out in an amphora. The white wine underwent skin contact overnight, followed by temperature-controlled fermentation at low temperatures in a stainless steel tank for 3 weeks. After fermentation, both wines were left to rest for 2 weeks before racking, and then aged in stainless steel tanks for 6 months before bottling.
The bottling was done on April 18, 2023, and it has undergone approximately 15 months of bottle aging. It has been finished as an orange wine that fully expresses the warm characteristics of Fukuoka and Kyushu.
Use of wild yeast. Unfiltered, unclarified. No sugar or acid adjustments have been made at all. A very small amount of sulfur dioxide is used at the time of bottling.
