Aiming to create the world's easiest-to-drink orange wine. This is SHINDO WINES' second 100% Kyoho orange wine release.
Kyoho grapes have high water content and relatively weak pigments in their skins, making it difficult to achieve the deep purplish-red color typical of common red wine varieties even with long fermentation. However, short maceration fermentation results in an orange wine that is juicy, charming, and easy to drink because the tannin influence from the skins is not too strong.
"ASAHA ORANGE" is an orange wine made exclusively from ripe Kyoho grapes with a reddish color similar to Delaware grapes. The first release, "Egalite 2021," was crafted with a focus on a robust orange style, while "ASAHA ORANGE" was blended to create a clean and easy-to-drink orange wine. The blend ratio is just over 40% orange wine and just under 60% white wine. Blending with white wine reduces the bitterness and astringency typical of orange wines. Additionally, a red wine that underwent long maceration fermentation is blended in as a secret ingredient to add depth to the aroma and flavor.
The orange wine used in the blend was fermented at room temperature in a resin tank for 5 days, then fermented in an amphora after pressing. The white wine underwent overnight skin contact, then was temperature-controlled at low temperature in a stainless steel tank and slowly fermented over 3 weeks. Both wines were left to settle for 2 weeks after fermentation, then racked and aged in stainless steel tanks for 6 months before bottling.
Bottled on April 18, 2023, and aged in the bottle for about 15 months. This orange wine fully expresses the warm climate of Fukuoka and Kyushu.
Uses wild yeast. Unfiltered and unclarified. No sugar or acid adjustments have been made. A very small amount of sulfur dioxide is used at bottling.
