・Relatively high alcohol content of 11% (UKIHA BUBBLES 8–9%, Fukuoka Sparkling 8%)
・Strong carbonation (residual sugar 12g/L at bottling)
The reason for focusing on these two points during production is that we want this Kyoho sparkling wine to eventually become a representative of Fukuoka, standing shoulder to shoulder with Champagne and Crémant.
The aroma is fruity yet strongly fizzy, making it a natural sparkling wine with a satisfying body. We believe such a wine can be made using Kyoho.
Freshness is created by adding young Pione juice for acid adjustment to the pressed Kyoho juice, then the blended juice is slowly fermented at a low temperature of 11°C. Racking is done once near the end of fermentation.
After racking, Kyoho must is added during fermentation so that the residual sugar at bottling is 12g/L. Released after about 8 months of secondary fermentation and aging in the bottle. No disgorgement is performed.
KYOHO BUBBLES 2024 is the first challenge to make a lightly sparkling wine from Kyoho in Fukuoka that can stand alongside Champagne and Crémant.
