- Relatively high alcohol content of 11% (UKIHA BUBBLES 8–9%, Fukuoka Sparkling 8%)
- Firm carbonation (residual sugar at bottling 12g/L)
The reason for focusing on the above two points during production is because we want this Kyoho sparkling wine to eventually become a representative of Fukuoka, standing shoulder to shoulder with Champagne and Crémant.
The aroma is fruity yet has a strong carbonation and a satisfying body, making it a natural lightly sparkling wine. We believe such a wine can be made using Kyoho grapes.
Young Pione juice for acid adjustment was added to the pressed Kyoho juice to create freshness, and the blended juice was slowly fermented at a low temperature of 11°C. Racking was done once near the end of fermentation.
After racking, Kyoho must from fermentation was added so that the residual sugar at bottling would be 12g/L. It was released after about 8 months of secondary fermentation and aging in the bottle. No disgorgement was performed.
KYOHO BUBBLES 2024 is the first challenge to make a lightly sparkling wine from Kyoho grapes in Fukuoka that can stand alongside Champagne and Crémant.
