This wine uses Rosario Bianco from Masao Sato in Nanyo City, Yamagata Prefecture, and Chardonnay from Atsushi Yoshida in Kaminoyama City, Yamagata Prefecture.
Rosario Bianco is a muscat-type variety with a mild aroma, and by slowly fermenting it for about three weeks, we extracted flavors reminiscent of green apple and La France pear, giving the aroma and taste a broader range.
Aging was done in old barrels for three months.
The Chardonnay was slowly fermented in a resin tank after pressing, and then aged for about three months in old barrels.
By combining these two grape varieties, I believe we were able to express the flavor of the taste and the acidity of the Chardonnay.
