This wine uses Rosario Bianco from Masao Sato in Nanyo City, Yamagata Prefecture, and Chardonnay from Atsushi Yoshida in Kaminoyama City, Yamagata Prefecture.
Rosario Bianco is a Muscat-type grape with a mild aroma; by gently fermenting it for about three weeks, we extracted flavors reminiscent of green apple and La France pear, adding depth to the aroma and taste.
Aged for three months in old barrels.
The Chardonnay was slowly fermented in a resin tank after pressing, then aged for about three months in old barrels.
By blending these two grape varieties, I believe we were able to express the flavor profile and the acidity characteristic of Chardonnay.
