These Steuben grapes come from Toshinobu Kazama, a grape farmer in Nanyo City, Yamagata Prefecture.
Mr. Kazama has lovingly nurtured and protected Steuben grapes every year for many years as a dedicated grape farmer.
We decided to create a wine that expresses the warm personality of Mr. Kazama, loved by everyone, and brewed it with heartfelt care.
The label features an illustration based on photos taken of the Kazama family during harvest.
The brewing process was kept simple without any complicated steps.
Fully ripe Steuben grapes were destemmed and gently pressed after a short maceration to preserve pure fruit flavors. The juice was then transferred to a stainless steel tank, clarified, and the yeast was slowly activated.
We carefully monitored the final fermentation stage before bottling (primary fermentation in the bottle).
When first opened, a gentle gas pressure releases the distinctive cherry-like fruitiness of the Steuben grape, which gradually transforms into soft acerola and plum-like flavors over time.
The gentle, body-friendly flavor lingers, and I believe you can continue to enjoy it as a rosé wine even after the gas pressure has dissipated.
