Speaking of Ohno Farm in Takahata Town, Yamagata Prefecture, if you know Alfiole, it is a legendary farm that grows the top cuvées, Rosso (Merlot) and Oro (Chardonnay).
And this Merlot is a very luxurious cuvée made from just one barrel of grapes specially shared with us thanks to Mr. Meguro's kindness. I have memories of making it with a lot of nervousness.
In 2023, rainfall was less than usual, and the harvest period was blessed with clear weather, resulting in a wonderful vintage.
The Merlot, lovingly grown by Mr. Ohno's farm, was made with a simple process. During fermentation, only a few push-downs were performed, and pressing was done gently and carefully to slowly draw out the potential of the grapes.
Through 7 months of aging in old barrels, smooth tannins, pleasant acidity, and fruitiness were brought out.
