Speaking of Ohno Farm in Takahata Town, Yamagata Prefecture, if you know Alfiole, they are a legendary grower who cultivates top cuvées like Rosso (Merlot) and Oro (Chardonnay).
This Merlot is a very luxurious cuvée made from a special single barrel of grapes generously provided by Mr. Meguro. I have fond memories of making it with great care and a bit of nervousness.
In 2023, rainfall was lower than usual, and the harvest period was blessed with clear weather, resulting in an excellent vintage.
The Merlot, lovingly cultivated by Ohno Farm, was made with a simple winemaking process. During fermentation, it was gently punched down only a few times, and the pressing was done carefully and slowly to fully draw out the grape's potential.
Aged for 7 months in old barrels, bringing out smooth tannins along with pleasant acidity and fruitiness.
