The year 2023 was an exceptionally hot year, unlike anything we have experienced in the past. The summer heat was intense, and contrary to the common belief in Mikasa that "it cools down after Obon," the lingering heat continued well into late September. As a result, the maturation of grapes was also different from usual, with increased challenges in winemaking such as reduced acidity and rising pH levels. Additionally, significant damage was caused by birds just before the harvest, making the winemaking process, which relies on a stable quantity of grapes, even more difficult. However, regardless of the harvest volume, the final sugar content of the grapes was satisfactory.
Based on various conditions such as yield and pH, in 2023, we are blending the cuvées from all the fields: "Wind", "Sun", and "Groves".
The grapes were thoroughly removed of any diseased fruit or bird-damaged fruit at the timing of harvest. After about two weeks of maceration, they were transferred to old barrels to undergo natural malolactic fermentation, followed by 8 months of barrel aging. The appearance is pale, with a slightly brick-like ruby color. The aroma features delicate and gentle strawberry-like fruit, spiciness from fragrant woods, and a scent reminiscent of dried flowers. The pleasant fruitiness and umami create an impressive gentle flavor.
