The year 2023 was an unprecedentedly hot year. Not only was the summer hot, but the lingering heat after Obon overturned the common belief in Mikasa that "it cools down after Obon," with the late summer heat lasting until around late September. Due to this, grape ripening differed from usual years, with factors making winemaking more difficult such as decreased acidity and increased pH. Additionally, severe bird damage just before harvest caused significant losses, making stable winemaking through a certain volume even more challenging. However, regardless of yield, the final sugar content of the grapes was satisfactory.
Based on conditions such as yield and pH, in 2023 we blended cuvées from all vineyards: "Wind," "Sun," and "Woodland."
Even at the timing of grape harvest, we thoroughly removed diseased and bird-damaged fruit. After about two weeks of maceration, the wine was transferred to old barrels for natural malolactic fermentation and aged in barrels for eight months. The appearance is pale with a slightly brick-toned ruby color. The aroma features delicate and gentle strawberry-like fruit, spicy notes such as fragrant wood, and a scent reminiscent of dried flowers. The pleasant fruitiness and umami blend into a gentle taste that leaves a strong impression.
