Zattana/Zattana Cidre Cricket Door Present (Kirigirisu Tonari Ari) 2024 (White Sparkling) 750ml
Regular price ¥2,750A dry cider with a subtle astringency from the wild grapes.
Uses apples and wild grapes harvested in late October.
Made by waiting for natural fermentation to occur without adding dry yeast after juicing.
Apple juice is added just before bottling, and the cider is finished through fermentation inside the bottle.
Carbon dioxide produced by yeast is gently dissolved, creating a soft and dry cider.
"Kirigirisu Tonari Ari" is one of the 72 micro-seasons. It refers to the time in late autumn when insects chirp in front of the house door.
Wild grapes are characterized by their acidity and wild flavor. They ripen day by day as autumn deepens.
